About Us.
Natural Ice-Cream Australia are Artisans of small-batch, gut-health focused ice-cream that is both prebiotic and probiotic.
Our natural ingredients and flavours are inspired by our beautiful Australian bush with a particular focus on indigenous produce.
Cultured icecream is a technique that took over 18 months to develop. The beneficial gut-health bacteria breaks down the lactose (milk sugar) and casein (milk protein) into tangy lactic acid, tasting wonderfully light and resulting in easier digestion.
We pride ourselves on catering to everyone's palate and dietary needs.
We can also tailor ice-cream to themed events or match food in collaborative settings such as weddings & private parties.
Based in Brunswick Heads just north of Byron Bay, we open our van to the community Friday, Saturday and Sunday from 12 - 4pm.
Our Ingredients.
Inspired by indigenous Australian ingredients combined with a Scandinavian philosophy of time and place, we source our produce locally according to the season.
Some of our ingredients include pandanus, mulberries, native ginger, small leaf tamarind, bush lemon, rosella, aspen, quandong, peppermint gum, strawberry gum, wattleseed, alongside staples like smokey paperbark, coconut yoghurt and davidson plum.
We source our ingredients from the Northern NSW region, from suppliers such as Playing With Fire Native Foods, Picone Exotics, Boonluck Farm, Peter Hardwick, Venetia Scott, and certified organic Organigrow Eggs at Lismore.
